The Ultimate Vegetable CruditéAt Scratch we often talk about how boring the typical vegetable tray is.  Over the years we have perfected our vegetable tray, including any number of choices – each one treated separately to bring out their best qualities:  Grilled Asparagus, Marinated Zucchini, Roasted Cauliflower, Broiled Roma Tomatoes, Grilled Red Peppers, Roasted Portabellas, Blanched Asian Broccoli, Grilled Green Beans.

We have perfected the perfect beef entree.  Slow Braised Beef nested in French Pastry with Triple Cream Brie and Candied Onions.  Served with a Demi Glace Beef Pan Sauce infused with Brown Butter.  Once you taste it, you will see what we mean.

Our first choice when it comes to carved steak on a menu.  We will adapt this protein to suit your flavor profile i.e. Southwestern, Asian, Italian

We began our catering journey many years ago preparing classic southern dishes.  Considering the countless dishes we prepare, there is nothing quite like a slow, hickory smoked beef brisket with classic BBQ Rub seasonings.  Many of our clients would rather eat this Texas delicacy that a Filet ! In many cases, we will upscale the dish a little bit with a nice, brown pan sauce, sauteed mushrooms and pearl onions.  Its up to you

We take the fish of your choosing and apply a mixture of Crab and Sherried White Sauce to yield a decadent, souffle like layer when baked. An American Classic

This signature dish utilizes Colossal Shrimp, butterflied and filled with a Buttery Cracker and Red Pepper Stuffing. Then we wrap the Shrimp with Luxurious Pancetta Bacon and Pan Sear. WOW

Roasted Vegetable Ragu

We individually Roast the Vegetables in this Dish (Portabellas, Zucchini, Red Peppers, Asparagus and Cauliflower) and toss them with Fresh Herbs and Roasted Tomatoes.  We serve this rich melange in a Puff Pastry tower called a Vol au Vent. A dramatic presentation, especially for a plated dinner

Falafel

We make our own falafel from Ground Fava and Garbanzo beans seasoned with traditional Middle Eastern ingredients such as garlic, fresh parsley and Cilantro. Fried on-site to achieve a perfectly crispy texture.  Served with Fresh Flatbread, Yogurt, Diced Cucumbers and Tomatoes with a just a touch of fresh mint.

We secretly smile at our competition’s treatment of sides and salads.  To most of them, they are an afterthought – putting most of their effort into the entrees and then open a can or thaw some bags of frozen veggies. Scratch recognizes that these sides and salads are as integral to the overall dining experience as the entree.  In fact, we know that a side or salad can elevate the meal to a truly unforgettable experience

Scratch’s Signature Salad

A blend of crispy Romaine, colorful spring greens and Unique Microgreens such as Tangerine Lace, Micro Basil, Shiso Leaves and Edible Flowers. We often add Candied Nuts, sliced Strawberries, Crispy Wonton Strips and Poached Pears.  The real magic comes into play with our simple, yet singular house dressing we lovingly call Mema’s Dressing, a vintage sweet cream and cider dressing which allows the salad to sing. Countless clients have deemed this salad the best salad they have ever eaten.

Signature Caesar Salad with Orange Scented Croutons

Crisp, Hand Torn Romaine Lettuce tossed just before serving with our own lemony-garlic infused dressing. To make it unforgettable, which is our way, we bake fresh Thyme and Orange scented croutons to elevate the salad

Our secret ingredient in these little gem is Starbuck’s Cinnamon Dulce Syrup – intended for the creation of their hot apple cider drink. We discovered that this syrup makes for an unforgettable glazed carrot

Green Beans are a classic mesh with just about any menu – why not guaranteed that everyone will remember them.  Our mothers prepared them with pan seared ham and sauteed onions to make for a well seasoned side dish.

Roasted Vegetables

This dish is more than a side, it is practically a entree.  We prepare each vegetable individually to preserve the integrity of the vegetables.  Portabella Mushrooms, Marinated Zucchini, Roated Cauliflower, Grilled Asparagus.  This is probably the best side dish you could offer up to an unforgettable meal.

5 Spice Root Vegetables

Sweet Potatoes, Turnips and Butternut Squash Roasted with Chines Fives Spice.  5 Spice adds the depth of Star Anise, Cinnamon and Clove.  A Unforgettable Choice for a menu with a rustic edge.

Uber Cheesy Mac n’ Cheese

Is there anyone on the planet that doesn’t love extra cheesy, creamy Mac n’ Cheese.  This dish is adored by Adults and Children alike.

Ginger Lemon Sweet Potatoes

Fruite Charlotte

With the help of some fancy baking molds, we create lovely, miniature Charlotte shaped pies with virtually any filling from pumpkin to blackberry.

Bread Pudding

Although you can make nearly any flavor of Bread Pudding, we prefer either Chocolate Peanut Butter or Bourbon Orange !
